Ritz Chicken

The whole family loves this chicken! And it's so easy!

Ritz Chicken

Ingredients
6 large chicken breasts
2 tubes Ritz crackers
6 Tbsp. Parmesan Cheese
1 to 2 cups sour cream (can use fat-free!)
1/3 to 1/2 cup butter, melted (**OPTIONAL! I have been making it without any butter at all for months now and it tastes GREAT!!)

Directions

Put Ritz crackers in a Ziploc bag and smash with rolling pin until crushed into crumbs. Coat chicken with sour cream then roll chicken in Ritz cracker mixture and place in a suitable baking dish. When all of the chicken is in the dish, sprinkle with parmesan cheese and pour melted butter evenly over chicken. Bake uncovered in oven for 60-90 minutes at 350 or until chicken is cooked through.

***Of course you can make it in much smaller increments...but why? ;)

I have a recipe like this, but I substitute the sour cream with plain non-fat yogurt. So it's even healthier and it still tastes GREAT!

This was really yummy. I used fat free ritz and fat free sour cream. It was still delicious and moist! Thank you so much for sharing, as I just recently discovered your blog.

I have a similar recipe with chicken that's delicious:

4-6 boneless skinless chicken breasts
Dijon mustard (usually most of a jar)
About 2 cups bread crumbs (might need more depending on how much chicken you're using)
1 can of cream of mushroom soup OR cream of chicken soup OR evaporated milk (all work just as well, change it up!)
Grated parmesean cheese (the kind you top spaghetti with works well)
Seasonings (in the south we have Tony's, it works well)

Mix "wet" ingredients together, to taste, I just guess most of the time about measurements, soak chicken in mixture, well coated, all day.

Coat chicken in the dry ingredients. Lay pieces of chicken flat as possible in 9x13 baking dish, use any left over dry mixture to cover the chicken, it gets crispy when you cook it, that's the best part!

Cook at 450/475 degrees until done -usually about 40 minutes.

It goes GREAT with macaroni and cheese, the crispies from the chicken mixed in with the mac and cheese are just delicious!
